Brunswick, Georgia says it invented this stew in 1898 — and we're not arguing. Smoky pulled pork and chicken simmered low with corn, butter beans, and tomatoes until thick enough to stand a spoon in. The proper sidekick to any Georgia BBQ plate.
Directions
- Melt the butter in a Dutch oven over medium heat and cook the onion until soft, about 5 minutes; add the garlic for the last minute.
- Stir in the crushed tomatoes, stock, BBQ sauce, Worcestershire, vinegar, and smoked paprika.
- Add the pulled pork, chicken, corn, and butter beans, and bring to a gentle simmer.
- Simmer uncovered 60–90 minutes, stirring now and then, until thick and spoon-coating. Add a splash of stock if it gets too thick.
- Season with salt, pepper, and hot sauce. Like all good stews, it's even better the next day.
