Spicy Grilled Georgia Shrimp

Wild Georgia shrimp char-grilled with a smoky-spicy glaze and a squeeze of charred lemon. On the table in twenty minutes — serve over grits, rice, or straight off the skewer.

Directions

  1. Pat the shrimp very dry, then toss with the olive oil, garlic, smoked paprika, cayenne, oregano, and salt. Marinate 15 minutes — no longer, or the garlic burns.
  2. Heat a grill or grill pan to high until smoking.
  3. Grill the shrimp 2–3 minutes per side until pink with charred edges, and grill the lemon halves cut-side down alongside.
  4. Squeeze the charred lemon over everything, shower with parsley, and serve immediately.
